SPRING SALAD

Made a colorful early spring salad!

Colorful early spring salad! Consuming a variety of colorful fruits and vegetables provides minerals, antioxidants and vitamins that a great  for your body.

INGREDIENTS: 

1 cup spinach

1 cup mizuna

1/2 cup diced baby carrots

1/2 small red bell pepper, diced

1/2 med mango, cubed

handful blueberries

1 teaspoon rice vinegar

1 teaspoon olive oil

1 table spoon lemon juice

DIRECTIONS: 

  1. Combine spinach and mizuna in a bowl; then add bell pepper, carrots, mango and blueberries.
  2. Mix rive vinegar, olive oil and lemon juice in a cup; then sprinkle all over salad.
  3. Enjoy and reap the health benefits!
