EGGS BAKED IN AVOCADO

Eggs baked in avocado has officially taken over so our resident foodie has given it a try. Give this high protein, low carb snack a taste.

I have recently seen photos of eggs baked in avocado all over the internet and decided to give it a try. Avocados are a good source of fats and when mixed with eggs can create a high protein, low carb snack that not only looks great, but is also tasty and will leave you feeling satisfied.

INGREDIENTS
2 avocados
4 eggs
½ tsp salt
1/8 tsp pepper
pinch zaatar
pinch red pepper flakes
pinch of oregano

DIRECTIONS
1.Preheat oven to 425 degrees F.
2.Slice the avocado in half and remove the pit; scoop some avocado from the center evenly in order to create bigger area for the egg.
3.Place the avocado in a small pan and make sure to keep them as close to each other so that they do not fall on side.
4.Crack a single egg in a small bowl first, then scoop the yolk into the avocado and add just enough egg whites to fill the avocado.
5.Place in oven and bake for 15-20 mins.
6.Remove from oven and season with salt, pepper, zaatar and oregano.
