Weekdays can be pretty busy especially if you are working all day and have to come back home to cook dinner. Check out simple, quick, healthy meal that will definitely leave you satisfied.

Servings: 3  

Prep time: 10 min 

Cook time: 15 min


1 lb shrimp

1 lb bok choy

6 medium sliced shitake mushrooms

4 cloves garlic

1 ½ tablespoon of finely chopped fresh ginger

½ cup green onions

4 tablespoons teriyaki sauce

¼ teaspoon salt

¼ teaspoon black pepper

4 tablespoons olive oil


  1. Heat the oil medium temperature in a Wok, then add green onions, ginger, garlic and let it fry for about two minutes or until slightly browned.
  2. Add the shitake mushrooms and continue to sauté for an additional two to three minutes.
  3. Add the bok choy and stir the mixture evenly until the bok choy wilts. Then add the shrimp, (MAKE SURE TO SEASON THE SHRIMP WITH SALT AND PEPPER BEFORE ADDING IT IN).
  4. Continue to stir until the shrimp turns pink, then add the teriyaki sauce and allow it to cook for another minute.

Voila! All done. Enjoy over rice!
