Happy Thanksgiving everyone! We know you are all prepping for tonight’s festivities, but in case you’re not sure what to make for dessert, Rose from Rosie’s Sweet Treats is providing us all with a delicious cranberry pie recipe. Enjoy!

Cranberry Pie

  1. 5 cups fresh cranberries
  2. 1 cup sugar
  3. 1/4 teaspoon salt
  4. 1 tablespoon corn starch
  5. the zest of an orange
Oat Streusel Topping:
  1. 1/2 cup melted butter
  2. 1 cup brown sugar
  3. 3/4 cup flour
  4. 3/4 cup oat
  5. 1/2 teaspoon cinnamon
  6. 1/4 teaspoon salt
To Make the Filling:
  1. Whisk together the sugar, salt and corn starch.
  2. Put the cranberries and orange zest in a medium saucepan and pour the sugar mixture on top of the berries.
  3. Put the pan of filling over medium heat.
  4. After about 5 minuets, the berries will begin to release their juices.
  5. Stir and cook for another 5 minuets until the filling starts to thicken.
  6. Set aside and let the filling cool completely.
To Make the Steusel:
  1. Whisk together the sugar, flour, cinnamon, and salt.
  2. Add in the oats.
  3. Pour the warm melted butter over all the other ingredients and mix until all of the oat mixture is damp.
  4. Break the streusel into small bits and spread onto a cookie sheet and let chill in the fridge until firm.
Assemble the Pie: 
  1. Roll out your pie crust or use a pre-made pie shell.
  2. Pour the cooled cranberry filling into your pie shell and top with the streusel.
  3. Place your pie into a preheated 375 degree Fahrenheit oven and bake for 45- 50 minuets.
  4. You’ll know the pie is ready when you can see the juices in the pie bubbling and the streusel on top is browned.
  5. Let cool to room temperature before serving.
